Chicken Enchiladas II
We love this recipe, except for the fact that it uses canned cream of mushroom soup. We tried a different chicken enchilada recipe a few weeks ago. It was good, but the boys didn't like the shredded chicken texture. I will give it a try again, but this one is easy and good.
I season the cubed chicken with salt, pepper, and garlic powder, then saute it with some olive oil and butter.
Mostaccioli with Spinach and Feta
To make slicing the sausage easier, put it in the freezer for a few minutes to semi-freeze it. Cook the sausage in a skillet, put on a separate plate, pour off the fat, add olive oil to the same skillet and saute the veggies. This will give the dish an extra oomph of flavor!
Manicotti- I didn't take a photo of this dish. This one got a lot of great reviews. My family liked it, but I thought it was a bit bland. Maybe adding some basil or oregano to the cheese mixture will give it a boost.
