Krispy Peanut Butter Balls
I really don't know the exact name for these treats we received from one of our friends, but they are delicious! A couple of families gave us some homemade Christmas candies and cookies. I must confess, I did not make anything to give out this year. Usually we'll make an array of different Christmas cookies and /or give out homemade vanilla or homemade lip balms and lotion bars. This year? Nada! I've been really pre-occupied by current events going on around here, plus a week's worth of stomach bugs. So, apologies to all who are usual recipients!
Anyway, one of our friends makes really good candies such as fudge and caramels. She also gave us some Krispy Peanut Butter Balls and Cashew Brittle. Everything was delicious and I was able to get the recipe for the peanut butter balls to share with you. In fact, I should ask for the Cashew Brittle and the fudge and caramel recipes too. :) YUM!
Krispy Peanut Butter Roll
from my friend "K"
1 cup natural peanut butter (I used homemade)
3 cups Rice Krispies
2 cup mini marshmallows
1 cup peanuts
Melt almond bars in a large bowl (microwave or double boiler method). Stir in the peanut butter.
Remove from heat and gently stir in rice krispies, mini marshmallows, and peanuts until fully incorporated.
Scoop out little balls of mixture onto a cookie sheet lined with parchment paper. Let set until hardened, then enjoy!
The scooper I used is a medium scoop approximately 2 Tbsp. The package of almond bark I got was actually 24oz, but each little cube weighed about 2oz. each, so I just needed 10 of these cubes. "K" says that you can use any proportion of the ingredients (except for the almond bark and peanut butter) as long as it measures out to be 6 cups. If you want less marshmallows and more peanuts, go for it, as long as everything matches 6 cups total. This batch gave me about 40 servings.
These are sooo good! Don't wait until Christmas to make these, enjoy them throughout the year.
